MA’S SPANISH OMELET or Potato tortilla with pepper and tomato

This morning Peter asked me if I can make a Spanish Omelet as his mother used to make, for breakfast. I know he did not mean the Spanish tortilla made with potato, onion, olive oil and eggs. I do remember ‘Ma’ as I called her making an omelet with tomatoes, peppers, onion and eggs.
So, I said yes, and researched an omelet made the way Ma made it. All I found was a quiche like dish which would have taken 40 to 45 minutes. That is not what Peter wanted nor was how Ma made it.
In case you are wondering why I am calling this omelet a ‘tortilla’? Yes, that is the word the Spanish use for omelet and the word the Mexican’s use for flat breads/wraps.
I will make a Potato Tortilla one of these days, it is more of a brunch dish, and post for you.
Prep and set aside:
Olive oil – 3 to 4 T
Potato – 1 ½ c sliced thinly, I used my mandolin
Onion – 1 ½ c sliced thinly, I used my mandolin (sweet onion)
Green bell pepper – ¾ c sliced thinly (I used an orange one as greens make me burb!)
Roma tomato – ¾ c sliced thinly (you can use cherry or grape tomatoes instead)
Eggs – 4 large
Milk - 2 T
Kosher salt and ground black pepper
Parsley – 2 T finely chopped for garnish
Let’s get cooking:
Heat a 10” deep skillet on medium heat with olive oil in it.
Add the onions and the potato and ¼ t of salt and stir well until they are translucent.
Add the tomato and the pepper and ¼ t of salt and cook till slightly softened, and mix the vegetables well.
In the meantime, break the eggs into a small bowl, sprinkle with ½ t of Kosher salt and beat lightly for a few minutes then add the milk and ½ t of ground black pepper and beat well.
Spread the vegetables in a layer on the bottom of the skillet then pour the eggs over the vegetables. Lower the heat to medium low and let the eggs cook till they are set. The top will still be wet.
Turn on the broiler and let it heat up for 2 minutes. Turn off the broiler and place the skillet under the broiler and leave until the eggs are almost set, 2 to 3 minutes.
Remove and let sit for 5 minutes. Cut into six, sprinkle with parsley and serve with breakfast sausage or bacon and toast.
