NO RECIPE, RECIPE FOR A ‘KALE AND RICE BOWL TOPPED WITH AN EGG’
Gluten and Lactose-Free
This morning I am going to give you a recipe based on the above photograph our son Alexi texted us.
When I texted back and asked if I can post it and the what and how of it, he texted back saying:
Rice on the bottom
kale sautéed with red pepper flakes
half an avocado
Sunny side up egg
Sriracha and sesame seeds
He is a man of few words.
But that is all there is to it! You can have it as a breakfast bowl, a lunch bowl or a dinner bowl. Whenever you decide it will be yummy.
How should you do this?
Use left over rice. I would use brown or light brown rice as it would be sturdier than white under the kale. But white rice would be fine as well as quinoa or kasha. If you use left over rice, remember to reheat with a bit of water - 1 c rice, 1 to 2 t water - covered with plastic wrap in the microwave or in a skillet with the cover on over low heat. The water is important to make the rice rehydrate and become soft. (The same goes for reheating quinoa or kasha)
I know he would have used Lacinato Kale as he grows it in his garden. I would use the same, as I like it better, but you could use the curly kind or even spinach. First, I would remove the stems, and slice them super thin. Then I would slice the kale leaves and sauté stems and leaves in olive oil with some onion and garlic and the red pepper flakes. Yes, sauté the onion first, then add the garlic and the red pepper flakes, then the kale stems and finally the leaves and salt to your taste. If you wish you could just steam the kale and leave out the red pepper flakes, onion, garlic and olive oil and use seasoning of your choice.
I would peel and cut the avocado into wedges and sprinkle some lime juice and salt on them. You could cut the avocado in half, slice or chunks, use lemon juice and salt or use none if you plan to eat that avocado quite soon after you cut it. Then again, make guacamole if that is how you like your avocado.
As we love sunny side up eggs, that is what I would make, but you could make over easy scramble, make the eggs boiled and sliced, poached or soft boiled or leave it out altogether. I personally would miss the egg.
I would use the sriracha and sesame seeds for mine and tomato ketchup and sesame seeds for Peter’s. You can use any sort of sauce and seeds you like or just salt and pepper.
This is a meal I would call, fast, easy and comforting as well as yummy.
