NO RECIPE TOMATO SOUP Gluten and Lactose-Free

I find it fun and Peter finds it exasperating when I make stuff from left overs - ‘must-goes’ as we say in our family.
For me it is fun to create something yummy with left overs. Almost liked in that show Chopped! Without a timer going on, thankfully! Peter finds it to be exasperating since I can’t replicate it. 95% of the time the new thing I make is super yummy.
I ended up with about 5 ½ cups of sauce, Newman’s Marinara plus frozen chicken juices, after I simmered the frozen chicken legs for the Chicken Cacciatori. I used about 2 cups of sauce for the Chicken Cacciatori. That left me with several more cups of enriched sauce which I poured back into the Marinara Sauce jar to use for other applications.
Why I am I saying enriched. Well, chicken did simmer in the sauce for an hour. The seasoned (salt, pepper, granulated garlic, a little sweetener if the sauce is too tart for your tastes) chicken imparted a lot of flavor into the marinara sauce.
Tomato soup was one of the things I made with this sauce. It is going to be lunch along with some toast.
I used about ¾ c of the enriched sauce from the jar,
some liquid I had left from cooking potatoes the other day, about 1/3 c,
about 1 ½ c of Kitchen Basics chicken broth,
about a cup of rice that was in the refrigerator,
A small wedge of cabbage, about 1 c when thinly sliced,
I put all this stuff into a pot except for the cabbage and set it to get hot so the flavors mix and blend,
I sautéed the cabbage in 1 t of ghee for about 3 minutes on high heat and added it to the pot of soup.
Checked and adjusted the seasoning and served with toast.
Was it good? Yes, it was soo good.
When you want to make tomato soup with left over tomato sauce, add anything that you have on hand, small amounts of vegetables, pasta, rice, cooked meat, liquid left over from steaming vegetables broth. Do be careful of the amount of salt you add as the foods you are adding to the soup are already salted.
Yes, I save the water or broth I use to steam vegetable in a jar and add it whenever I need liquid. I use the same liquid to steam other vegetables which only makes the liquid tastier.
Use it to cook rice, quinoa, add to stew. I use any liquid I have left to add to a pot of broth I am making. Go for it. Add a little milk or cream, cow or plant, if you wish for a creamy soup. You can use your emersion blender or food processor and puree the soup smooth or keep it chunky.
It’s your soup. Add whatever you want, eat it with whatever you want.
