CHINESE MEATBALLS

These are sooo good that I can’t believe I haven't shared them with you before this. This is a recipe I have made for at least 35 years!
Serve these meatballs with rice, white is best, why? It looks prettier on the plate!, but brown is ok. A green vegetable like steamed string beans or broccoli tossed with sesame seed oil. Of course if you can get snow peas that is the best.
Peter says to pour them over him in a bathtub and he will wallow. He loves these that much!
You can use ground chicken or pork if you are avoiding beef. You can also add about ⅓ c bread crumbs to the meat mixture to make more or slightly larger meatballs. Large meatballs does not work in this application.
Velveting the meat with baking soda will make the meatballs so tender and moist.
Meatballs:
Beef - 1 lb 93% lean ground
Baking soda - ½ t
Cloves - 1 t ground
Ginger - 1 t ground
garlic - 1 t granulated
Ketchup - 2 T
soy sauce - 2 T
Honey - 2 t
Water - 2 T
bread crumbs - ½ c dry
Sauce:
Cloves - ½ t ground
Ginger - ½ t ground
Garlic - ½ t granulated
Ketchup - ¼ c
soy sauce - ¼ c
Honey - ¼ c
Water - ¼ c
To serve:
Cooked white rice, sauteed green beans or some other vegetable.
Let’s get cooking!
As always, measure out everything and set aside.
Leave meat on the counter until almost room temperature, mix in the rest of the ingredients. leave the mixture to marinate for up to overnight, in the refrigerator, or as little as no time! Form into 1” balls and set aside.
If you want to have a lot of sauce double the ingredients for the sauce.
Place the meatballs in a hot skillet sprayed with cook spray, cook until light brown all over, turning for about 8 minutes.
Mix spices, ketchup, soy sauce, honey and water and add to the meatballs in the skillet, bring to a boil, cover, lower heat to very low and cook for about 40 mins.
Every 10 mins or so pour sauce over the meatballs with a spoon. Keep adding a small amount of water as needed so there is at least ½ cup of liquid in the skillet. If on the other hand there is too much liquid in the skillet at the end of cooking time, remove the meatballs, reduce the liquid to about ½ a cup. If you are wanting more of the sauce, reduce only until you have ½ to ¾ c of sauce left.
While the meatballs are cooking, make your rice and vegetables and serve the meatballs over the rice along with the vegetable.
For dessert, have some ice cream and or orange.
