PANCAKES or WAFFLES
Gluten-Free and Lactose-Free
Even if you are not gluten-free try a package of GF pancake mix using your regular milk.
Makes 8 larger or 12 smaller pancakes
Two or three days ago I made a large batch of pancakes. The best pancakes I can make now comes from a package! How did this happen! I am all about making from scratch!
Let me tell you that different gluten-free flour blends are needed to make different products. Yes, you can go reach for any package of gluten-free flour blend but the end product of everything made with that package of GF blend will not come out as you expected.
Let’s take pancakes, some blends make gummy pancakes, some make gritty pancakes, some make dry pancakes. I use is “Bob’s Red Mill Gluten-Free Pancake Mix” they make the best pancakes ever and no one even realizes that they are gluten-free and came from a package!
If you use the recipe on the back of the package, you need to adjust the amount of liquid you use, I find I always need more. Your mix should be thick but still pourable. I make waffles with this same mix but add a little more milk so the batter spreads over the waffle maker and 2 t baking powder to the mix which makes the waffles crispier.
If you want fluffier pancakes, whisk the whites by themselves until the soft peak stage then add to the rest of the batter by mixing ⅓ the whisked whites gently to lighten the batter and then add the rest of the whites and fold gently so as not to smash up the air you whisked into the whites.
Many years ago before the arrival of Lactaid Brand Milk, I used Tropicana Orange Juice, then all OJ had pulp. I’ve never used plant-based milk.
This recipe is NOT only for gluten and lactose-free folk. BUT it is for using Bob’s pancake mix. I urge all of you to try it. Use the GF mix and your regular milk.
We do use pure maple syrup. As we eat pancakes or waffles only a couple of times a month and do not use a whole ¼ c of syrup for each serving, it is a pleasure we are not prepared to give up. But you must do as you please.
I mention the ingredients by brand, you can use the brands you like. EXCEPT for the pancake mix. :)

As always, measure out what you need and set aside before you start to cook!
Bob’s Red Mill Gluten Free Pancake Mix - 1 ½ c
Orange Zest - 1 T or orange peel finely minced (optional)
Lactaid Milk - 2 or 4 percent, 1 ¼ c + more if needed.
Eggland’s Best Eggs - 2 large at room temperature
Land ‘O lakes butter - salty or sweet, 2 T melted or any mild tasting oil.
Kirkland’s Blue Agave or Maple Syrup - 1 T (optional)
Kirkland’s Pure Vanilla - ½ t (optional)
Kirkland’s Pure Maple Syrup or Blue Agave, fruit, sausage or bacon whatever you want to serve with the pancakes/waffles.
How to make:
In a medium-sized bowl, whisk pancake mix and orange zest if using.
In a larger-sized bowl whisk eggs, melted butter, agave, and vanilla, then add the milk and whisk till well combined.
Mix the dry and the wet and stir to combine. If your batter has small clumps of flour don’t worry. Set the bowl aside for about 15 or more minutes while you set the table and get your griddle or largest skillet heated to medium heat. spray lightly with cook spray or wipe a little oil all over the skillet with a piece of paper towel or a brush.
Pour the batter on to the heated skillet with a ¼ c measure for 4” pancakes, or a large spoon for smaller pancakes. You can make several of the smaller pancakes in a large skillet or griddle at one time.
Cook until the top is bubbly, then flip your pancakes over with a spatula (the top which was the bottom, should be a dark golden color). When the bottom is golden also remove the pancakes to a cooling rack you set in the oven or just on to a plate.
Keep on cooking pancakes until the batter is all gone. Use a rubber spatula to scrape the bowl, why throw away your batter?
I let the extra pancakes cool and then put them in a zip lock bag and freeze them for next time. Next time, toast them so they are warm and eat.
Serve your pancakes with pure maple syrup, fruit, bacon or sausage whichever pleases you.
